Our modern tapas tasting tour takes you out Seville’s old town and into the new world of the hottest local bars. The city’s most exciting culinary scene is happening left of center, and we created this tour to give you an insider’s glimpse. Young chefs, enamored of the city’s product but hungry for new technique and new flavors, craft exciting dishes like sous vide egg with mushroom cake and stewed lamb in steam buns.
These are bars you would not likely find by yourself, and our team has test-driven and taste-tested the menu at every one. My wife and I were staying at the Hotel Alfonso XIII, where Mimo Sevilla is located. Walking in, I was *very* impressed with Laura Marcano's knowledge of wine and her evident passion for food. In the course of our conversation, we mentioned a few of the places we have eaten at on this trip, and she suggested we look into taking their "Modern Stars" tapas tour. It sounded really interesting, and we signed up. Our guide, Aldara Arias de Saavedra, was simply AMAZING! A native of Seville, she not only speaks but comprehends English like a native (fortunate for us, as -- sadly -- our Spanish is very limited). Her knowledge of both the culinary and cultural history of Seville made every bite we took, every tapa we ate, that much more meaningful as we came to understand the evolution of the food, and not merely its ingredients. I cannot recommend this tour enough.

Mimo Modern Tapas Tour was just brilliant. Our guide Aldara was enthusiastic and knowledgeable both about the food and her city. we travelled to 3 different restaurants and sampled 12 different dishes and numerous wines. Aldara is known to all the staff and the evening progressed seamlessly and all too quickly. Highlights included Slow cooked egg on boletus cake with caramelised wine reduction a nd in Edicion Limitada the Gua Beo (Lamb Beo) and the foie gras and apple canneloone.

Sometimes when you travel it’s best not to plan everything in advance, but to look around and see what presents itself. As a food-obsessed San Franciscan, I was looking for the kind of Spanish cuisine in Sevilla that I’ve had in other parts of Spain – modern techniques and novel combinations of ingredients but rooted in Spanish tradition.
