Our modern tapas tasting tour takes you out Seville’s old town and into the new world of the hottest local bars.  The city’s most exciting culinary scene is happening left of center, and we created this tour to give you an insider’s glimpse. Young chefs, enamored of the city’s product but hungry for new technique and new flavors, craft exciting dishes like sous vide egg with mushroom cake and stewed lamb in steam buns.

These are bars you would not likely find by yourself, and our team has test-driven and taste-tested the menu at every one. Aldara was the perfect guide for my trip! Since it was the holiday season, my tour wound up just being her & me, which was a pleasant surprise! I traveled to Seville alone for a few days to experience the culinary scene. Aldara took me to a handful of the most exquisite and creative tapas restaurants in Seville. She was beyond informative, personable, and even more importantly, Aldara had personal relationships with each restaurant -- from chefs to the waiters. Her familiarity with the staff made for an unbelievably intimate and special dining experience at each stop. All of the restaurants we visited were within reasonable walking distance and had varying menus that were steep in culinary imagination. I would definitely suggest this and any tour with Aldara. Can't wait to return!

My wife and I were staying at the Hotel Alfonso XIII, where Mimo Sevilla is located. Walking in, I was *very* impressed with Laura Marcano's knowledge of wine and her evident passion for food. In the course of our conversation, we mentioned a few of the places we have eaten at on this trip, and she suggested we look into taking their "Modern Stars" tapas tour. It sounded really interesting, and we signed up. Our guide, Aldara Arias de Saavedra, was simply AMAZING! A native of Seville, she not only speaks but comprehends English like a native (fortunate for us, as -- sadly -- our Spanish is very limited). Her knowledge of both the culinary and cultural history of Seville made every bite we took, every tapa we ate, that much more meaningful as we came to understand the evolution of the food, and not merely its ingredients. I cannot recommend this tour enough.

Mimo Modern Tapas Tour was just brilliant. Our guide Aldara was enthusiastic and knowledgeable both about the food and her city. we travelled to 3 different restaurants and sampled 12 different dishes and numerous wines. Aldara is known to all the staff and the evening progressed seamlessly and all too quickly. Highlights included Slow cooked egg on boletus cake with caramelised wine reduction a nd in Edicion Limitada the Gua Beo (Lamb Beo) and the foie gras and apple canneloone.

What is the minimum age for this experience?

There is no minimum age for the lunchtime Tapas Tasting Tour.

How many bars will we go to?

The Tapa Tasting Tour includes up to four bars.

How big are the groups?

We like to keep our groups small. Generally, our tapas tours  have a maximum of 8 guests per experience.

What’s included in the price?

All food and drinks, and VAT are included in the price of our experiences. There is not anything extra you ever need to pay for.

The experiences also include your expert Mimo bilingual guide/translator. More details of what is included in each tour are provided under each product on the website.

Do your guides speak clearly in English?

Yes, all guides speak fluent English with years of experience living in English speaking countries. All have very high levels of proficiency, speaking many languages.

When does the experience start and do I need to arrive early?

All start time information is displayed on our website under each experience. We strongly recommend guests arrive at our shop between 5 and 10 minutes before any experience starts.

Are experiences available in other languages?

All tours are run in English but private tours can be arranged in other languages.

I’m a vegetarian – is this going to be a problem?

No problem. We will ensure that while on your experience, you will have the best vegetarian alternatives. However, you must let us know at the time of booking so we can organise this for you. The tour, however, is not recommended for vegans.

I am allergic to certain foods – is this going to be a problem?

No problem. If you have any dietary requirements please let us know. We will ensure you will have the best alternatives.

I don’t drink alcohol, is there a discount?

If you do not drink alcohol, we cannot offer a discount but will make sure you have the best alternatives available with a wide range of excellent soft drinks and juices available.

What happens if the experience I booked does not reach the minimum number of guests required?

There is no minimum for the tapas tour.

What if the experience I would like to do is not available on a certain date?

Email or call us and we will do our best to open a new date in the calendar.

Are your experiences suitable for children?

In Spain, children are very much a part of the dining scene and we welcome children on the lunchtime tapas tasting tour.
